Dish N' Dazzled at the 2012 BC Hospitality Foundation Fundraiser

Dish N' Dazzle featured more than 80 different wines from 22 wineries, tastings from some of Vancouver's top restaurants and a cocktail showdown.

Dishes from some of Vancouver's top chefs and more than 80 different wines from Argentina dazzled the large crowd in attendance at the Dish n' Dazzle Tasting, held recently at the Fairmont Waterfront Hotel, Vancouver benefitting the British Columbia Hospitality Foundation (BCHF) .

Dish n' Dazzle is the BCHF's signature fundraiser and showcases some of BC’s top chefs and industry-leading bartenders. It is also an event that helps take care of its own. The BCHF provides financial support for individuals within the hospitality community who are coping with extraordinary costs arising from a serious health crisis. The Foundation also awards scholarships and bursaries to students enrolled in hospitality programmes in BC. For food and wine lovers Dish n' Dazzle is one of the "it" events to mark on your calendar and the Fairmont Waterfront Hotel in Vancouver was certainly the perfect venue to be wined and dined.

For those arriving a little early in the evening or perhaps wanting a breather during the event, were able to spend some time wondering through the great collection of gifts and experiences that were being auctioned off over the course of the evening. Items included wines, artwork, accommodation packages and even signed Team Canada and BC Lions memorabilia.

With grazing stations from 14 top Vancouver restaurants to choose from, I felt like a deer in the headlights, so many delicious offerings I couldn't quite work out where to start.  I settled on the simple approach of starting with the dishes to my right and working my way around. 30 minutes later I had sampled the Halibut Ceviche with Mango and Avocado (Pier 7 Restaurant + Bar), Blackened Prawn Tacos with Chocolate Bacon (Rockford - Wok, Bar, Grill) and the Grilled Mini Fajita (Herons West Coast Kitchen + Bar). A stunning contrast of flavours and freshness of ingredients was a signature of each of these amazing dishes.

It was so easy to get districted with the multitude of dazzling dishes that it was nearly an hour into the evening before I realized I hadn't sampled a single glass of wine, so I set about changing that. With over 80 on offer it certainly wasn't hard to find a glass.
